Before you know it, patio grills will be out in full force for warm–weather appetites. What are your favorite foods to cook on the grill or at a cookout?
When it comes to grilling I swear by the foil packet. It's the crockpot of the grill world. Everything goes in-vegetables, fish or protein, sauces, herbs. It's amazing! I throw everything in, check my flavors, toss it on the grill and relax. My mother did a lot of grill packets when I was a child. Packets equal less time cooking and more time relaxing with your family. Most importantly, none of the flavor escapes in the cooking process so you're rewarded with a super moist flavorful meal.
At home I like simple dishes and like to marinate and brine Chicken, Pork or fish and then grill them with vegetables like Asparagus, Squashes, Peppers, Onions and even Potatoes.
some of my favorite foods to grill are sustainable fish. I like to cook fish over a slightly lower heat. Using something as simple as chopped herbs in olive oil to add flavor can be great with the hint of smokiness from the grill.
I like to keep what we put on the grill seasonal. Sometimes marking vegetables on the grill then putting the in foil to finish cooking in their own juices can be the way to go.
My mom used to call the boy scout carrots. (no offense to the boy scouts). She would take our garden carrots which had a lot more character, should I say, they were not always looking like the carrots in the store but they tasted better. We would wrap them in foil with olive oil, salt pepper, fresh herbs and then let the cook on the grill.
So delicious.
Onions are probably my favorite things to cook on the grill. I think they are so delicious with the char and then the sweetness of the onion.
whatever is from the garden should work in some form on the grill.
Time to get Creative.

I would have to say not much beats grilled corn on the cob. slap on some mayo and chow down.
I have a strong preference for Weber kettle grills, because of their versatility and I absolutely prefer charcoal or hardwood flavor. I like to smoke whole ducks in the kettle grill. Baby back ribs with Memphis-style sauce are my other favorite.
