BLT: Lately, BLTs and grilled cheeses are two comfort food sandwiches getting contemporary reinvention on menus. Are you classing up either of these sandwiches in any way?
At Baconfest this year I found a great dry cured back bacon made by Nick Spencer. Since I still wanted that smoky note on the sandwich I decided I'd pair it with smoked trout. Grilled Greek bread, organic tomato, arugula and lemon aioli make it a killer sandwich.
NAHA certainly is. Chef Carrie Nahabedian has on her lunch menu: Griddled Foccacia Sandwich of Spanish Serrano Ham,
Fried Hen’s Egg and Crave Brothers “Les Freres” Cheese, she is serving it with a Salad of Young Greens, Kohlrabi and “Beauty Heart” Radishes. This sandwich has been extremely popular.
