How are you working with chocolate and mint?
I like chocolate mint. I am not using any on my menu.. just mignardises here and there. I also like peppermint, and spearamint, euctalyptus.. all those have a cold refreshing feel to them just like the winter.
MInt and chocolate is one of my favorite combos. Simple but good and reminds me of being a kid. Right now I have on a chocolate cake, layered with mint white chocolate mousse, hot fudge, mint chocolate ganache bar, ice milk, peppermint patty.
Our bar does a mint hot chocolate with Swiss mint schnapps. WE make the bittersweet chocolate base for it in the kitchen, and it's steamed up at the espresso bar with Kilgus whole milk. On our New Year's Eve menu, we are serving hot chocolate beignets with Port wine hot chocolate & a frozen Asian pear and cherry salad that will incorporate mint, so you have the cool mint flavor in an icy composition next to two hot chocolate items - one which you dip in the other.
