I prefer the wine to be just a touch sweeter than the fruit. If the peaches are raw or in a salad I like Franz Hirtzberger's Gruner Veltliner from the 2003 vintage...its a texturally dense wine with just hint of exotic sweetness. If the peaches are cooked (and you are not on a budget) an Alsatian Pinot Gris Vendange Tardive. The wine has a nectar-like quality that beautifully matches the fruity sweetness of a tart or cobbler.
