Ice cream sandwich ingenuity
Dan and I are having our civil union reception in a few weeks at our lake house in Michigan. After dessert (Gale Gand is doing our wedding cake) we're having our staff pass ice cream sandwich cookies down by the lake. We're doing a Smores Cookie (our place is on the site of an old boy scout camp) with Chocolate Dipped Graham Cracker Cookies and a Marshmallow Ice Cream (all made by Dan)
At the Tavern I make a simple parfait and to sandwich it I make a flourless
cake, some days I'll pair it with a crumble for texture or add nuts. The
goal for me is to provide a gluten free option for our patrons while playing
with flavor. One of the more recent parfaits was a chocolate schezwan
peppercorn,
crushed red pepper, chocolate flourless cake, and chocolate crumble.
I wanted to open a macaron shop that made ice cream / sorbet filled macs in the summer. As it turns out macarons are a real pain in the derriere and I can't even imagine building an entire business around them. Still, I think it is a great idea for some crazy pasty chef to tackle.

I'm a fan of a cream cheese semifreddo between grilled lemon pound cake.
