At Sable Kitchen & Bar we'll be spotlighting Stone Brewing Co. with $4 drafts throughout the week. Chef Terhune will also be hosting a multi-course pairing dinner featuring a variety of Stone's brews on May 27 to cap off Craft Beer Week.

Americano is committed to recognizing and promoting the best and most creative
producers of craft beers possible considering we have no draft system. Our
selections are driven by reputation and quality first, then proximity to our
restaurant and finally, the brewery's position on sustainability. We bring in
beers from the west but typically only if packaged in aluminum cans. 21st
Amendment is one of the farthest reaching breweries we present and they only
package in aluminum. Slightly out of our norm is Stillwater Brewing Co. an East
coast entity without a brewery at all. This gypsy brewer takes advantage of
others facilities to produce an astounding array of Belgian style ales with the
most diverse pedigree due to the different yeasts and micro cultures encountered
in the different brewing quarters. Locally we have Great Lakes, now almost a
large regional brewer, leading the way for Thirsty Dog, Lagerheads, and a
personal fave, Cellar Rats Brewing Co. housed in the cellar of a local winery.

For craft beer week we're having fun with Belgian beers and our pizzas. On different days we'll choose a different beer to pair a pie with. Some examples: Lindeman's Peche with our Mortadella pizza—the pistachio on the pizza and peach in the beer play so well off one another; Boon Kriek (a cherry lambic) with our Telaggio and Smoked Guanciale pizza. Tart cherries and smoked pork. No brainer. And the cost is great too, with the pairings going for about $17 for both the beer and pie.

We're loving New Holland Brewing's Golden Cap Saison and we always have a run on Alagash White. I made a specific decision to go with one single tap feature at HEARTY that I'd change according to whim. Right now we're pouring North Coast's Le Merle Saison.

I am loyal to my local brewery, Boulevard, but I'm doing some ground breaking, I think : ), beer events here focusing on craft beers and adding an educational element by having an "interactive" session. This is the way I can have other craft brewers at the restaurant and still show my loyalty my home town hero : )

I'm a big fan of Flossmoor Station's work, and we're currently pouring their Stationmaster wheat on draft. It's got a lot of complexity and richness to it, plus it's not so sweet as a lot of wheat brews.
