On Thursday, April 18th Vie Restaurant of Western Springs, IL will team up with Le Cadeau Vineyard from the Willamette Valley, OR for a 5-course dinner in celebration of the long-awaited arrival of spring. With the food, Chef Paul Virant will be focusing on the midwest's seasonal bounty while at the same time integrating the pickles, preserves, and aigre-doux that have defined his own style of American cuisine and established him as a fixture in the flourishing restaurant scene of Chicago. To accompany the meal will be a flight of Le Cadeau's superb single vineyard Pinot Noirs. While they do come from a relatively small geographic area, each wine posseses a unique terroir and style, therefore creating a shockingly diverse spread of colors, flavors, and aromas.

Though subject to the seasonal availability of produce, the menu and pairings are as follows:
