Roasted Wild Maitake Mushroom... rutabaga puree, fresh herbs, porcini truffled gravy, pickled cranberries ($10.00)
A Local forager Brought us this beauty. I decide to display the mushroom it is a beautiful thing this time of year. We presented the Maitake very simple... A nice rich rutabaga puree, a gravy made with the stems of the maitake, porcini, and a hint of white truffle oil. We saute the mushroom with shallots and garlic and fine herbs. It is placed on the rutabaga puree and garnished with pickled cranberries and sunchoke flowers. A beautiful mushroom.
