Cassoulet
Cassoulet, our reigning heavy-weight champion, is back to claim its title belt. Training for Cassoulet Season 7 began on New Years Eve. Before the champagne started flowing, we banged out the menu in a little over an hour (good thing that happened earlier in the day - who knows what would have ended up on the menu after a few bubbles). Ordering hundreds of pounds of meat from six different local farmers/producers was one heck of a workout. Cassoulet fixins are smoked bacon, garlic sausage, toulouse sausage, leg of lamb, duck confit, white beans and dijon mustard
