Enchiladas of Woody Mushrooms and Poblano Peppers with House-Made Quesillo Oaxaqueno and Tomatillo Salsa
Josh spent some quality time in Oaxaca Mexican during his formative years as a cook- and it clearly had a delicious impact. Sunday Dinner hosts Mexican dinners once or twice year to celebrate our favorite flavors - lime, cilantro, chile-laced salsas and rich moles. Here, we make our version of Mexican fresh mozzarella and encase it in homemade tortillas with poblano peppers and wild mushrooms. Smother that with a heavenly mess of salsa verde bechamel sauce, sprinkle with cotija cheese and cilantro and perch crunchy radishes on top. Eat.
