Copy Kat at Urban Union
Copy Kat ($7.00)
My copy Kat dessert is a feuitine bottom layer that is mixed with hazelnut milk chocolate and then topped with a dark chocolate mousse. That is then enrobed with a shiny dark chocolate glaze. The other components to the dessert are chocolate sauce, candied cocoa nibs, candied hazelnuts, and a chocolate creameux. The creameux is best described as a chocolate pudding but the texture is much more creamy.
My inspiration was my favorite candy which are kit Kats. So I tried to imitate the flaky, crunchy texture that you get when you eat one. This is done with the light, flaky feuitine base. This is my full on chocoholic dessert. One of many things that chef michael has taught me is when you are creating a menu item with the intention of it being rich don't veer away from that, go in that direction and stick to it.
