Robuchon Potatoes at Nellcôte

Robuchon Potatoes ($7)
A dish made famous by a man who has more Michelin stars than anyone in the world. Why I'm introducing him I don't know, because the man really needs to introduction. But this is a Joel Robuchon dish.
These potatoes, made famous in the late 80's, are some of the most lush, decadent, smooth mashed potatoes. And yes, they have quite a bit of butter in them. That's what makes them so lavish. We're using Yukon Golds for the potato, and our making our own butter in house (the same butter we serve with our breads in this post). We add a little bit of milk and sea salt, and the whole thing gets strained about six times. They're so smooth and creamy it's ridiculous.
They're simply served with thinly sliced Perigord black truffle. And that's it. That's all it gets. The beauty of the dish is it's simplicity.
And it's $7. No kidding.
