Frisee Salad - pickled habanero vinaigrette, pork cheek ham, grains galore bread, farm egg ($8)
This is a good hearty winter salad. The frisée itself is a sturdy green with a strong, somewhat bitter flavor. It stands up well to other big flavors, so that’s what we give it: pickled habanero vinaigrette (with apple cider vinegar, honey and Dijon), pork cheek ham that we cure, cold smoke and then cook sous vide, and Grains Galore bread from Farm to Market Bread Company (probably my favorite bread from them) topped with a sunny side up farm egg. We also throw in some thinly sliced red onion and top the egg with chives and Maldon sea salt.
Pairing: L'Ecole No. 41 Chenin Blanc
