fried ockeechobee frog legs, creamed local morels, dill pickle vinaigrette, baby mustard greens ($16)
So this dish came about in a weird way. I originally ordered frog legs for a weekend thing for regular customers. Usually we have a ton but this past weekend there weren't much. Right when I was looking in the computer someone walked in with some beautiful local morels. So I simply put 2 and 2 together and that's how this dish came together. Frying the legs helps keep all the delicate briny flavor in the legs and helps retain a nice moist texture. The morels were cooked in creme fraiche and simply finished with some soft herbs. We then went topped the whole dish with some dill pickle vinaigrette and a few baby mustard green for some wonderful spicy flavor.
