Southern-Style Coconut Layer Cake with Strawberry-Mint Compote ($6.95)
You migt have heard that dessert is not my favorite course. True that, but I make two execptions: butterscotch and coconut. This updated version of a traditional Southern specialty hits all my buttons. Tender, velvety yellow cake layers sandwich lightly sweeetened whipped cream and toasted coconut. More around the sides and top. The gently roasted strawberry compote is redolent of mint and adds a sharp fruitiness to the unctious mouthfeel of the cake. Add a sip of Inneskillen Vidal Ice Wine and the flavors explode!
