Mascarpone-Carrot Cake Terrine at Michael Jordan's Steak House
Mascarpone-Carrot Cake Terrine ($9)
Carrot Cake and Mascarpone Terrine from pastry Chef Hillary Rikower of Michael Jordan's Steak House I alternate layers of thinly sliced carrot cake with a mascarpone bavarian. I flavor the the bavarian with Burton's Maplewood Farms Maplye Syrup. I compress pineapple with Dark Rum and Vanilla Beans then cut them into a small dice to garnish the terrine. I finish the dish with orange curd for tartness, walnut praline for crunch and a scoop of pineapple sorbet from Black Dog Gelato. This is my take on classic carrot cake, served chilled for the amazing summer weather.
