Pastry Chef Hillary Rikower whips La Clare Farms goat cheese with lemon juice and lemon zest as the base of this dessert. She folds in poppy seeds just prior to baking to ensure they are evenly dispersed. Once cooled, the cheesecakes are topped with blueberries that have been glazed in blueberry gastrique. She finish with dish with a traditional dulce de leche, lemon curd and brown butter-oat streusel that is studded with dried Michigan blueberries.
