Grilled Sockeye Salmon Niçoise Salad with Arugula, Fingerling Potatoes, Olives, Cherries and Pickled Lemon Vinaigrette ($24.50)
Summer is the only time i will eat salmon because that is when Alaskan season is open. Sockeye usually comes first and the Copper River run is most anticipated. These Copper River fillets are thick and take well to a quick grilling. The meat is so moist and unctious I like to pair it with a summery take on Nicoise Salad using sweet first-of the season cherries from Mick Klug in Michigan. Add tangy pickled lemons and a tart lemon vinaigrette with arugula, fingerling potatoes and spiced black olives and you have a perfect meal for a hot night like tonight. Sip a glass of Gascone White. Never heard fo it you say? Come in and try this tart, refreshing, minerally colombard. It is the Goss household summer white.
