Toasted zucchini bread, garlic and milk purse, wood grilled squashes, arugula, siitake mushroom escabeche and rosemary candied hazelnuts ($21)
This is one of those vegetarian dishes that you get proud of. It's always hard to not repeat veg dishes or do a pasta. I have always been a fan of quick breads and what better way to celebrate summer than zucchini bread. The fresh garlic and milk purée is sweet and smooth and rich. The squashes are grilled last minute and tossed with shiitake escabeche with a Parmesan vinaigrette, arugula and hazelnuts candied with rosemary and honey.
