Pan roasted alaskan halibut, fingerling ravioli, bernaise burre blanc, white anchovies, pickled carrots, radishes, green beans ($39)
Halibut is always a great thing to have on the menu. It sells well and it can pair with all kinds of things. With the new crop potatoes around I was thinking about some ravs for the starch. With the summer being so hot also why not a simple salad that packs some flavor. For the sauce I was thinking about tarragon which is great with so many veggies. We then thought about a bernaise base and we make that and use it for the burre blanc.
