I think it's the texture of lobster, or textures rather, that make me love this little beast so much. obviously the flavor is a huge factor but the chewy, meatyness of the tail and the almost slippery delicate texture of the claw and knuckle are what get me. that's why i like it in this dish. large pieces of lobster meat, house made chitarra, lobster-saffron and heirloom tomato red sauce, tarragon and a light dusting of lobster roe. that's it. simple. al dente pasta. sweet, meaty and delicate lobster. bright lobstery red sauce. pungent tarragon. done.
