I am always perplexed with chilled soups. I like to think of the garnish first then move onto the soup. Sable is a great fish but a bit pricey. We just got a new smoker so why not use sable in an avenue where I can use a little less than an app portion an combine it with some great flavors. The soup is clean and slightly acidic. And the. It all get tossed with some grapes, herbs and topped with sturgeon caviar.
