Sweet Potato Pone at Big Jones

Sweet Potato Pone ($12)
This dish was inspired by, and adapted from, one of my favorite chefs, Edna Lewis. Sweet Potato pone could be considered a staple of soul food cooking but definitely worked its way through the broader Southern cooking traditions over the late 19th century and into the 20th. It's mostly finely grated sweet potatoes with the tiniest bit of butter, egg, and aromatics, relying mostly on the sweet potato's natural starches to set it. It's dressed with fried sage & walnuts and a drizzle of Caudill's sorghum molasses. It's pretty rich so a salad of fall arugula with apples and watermelon radishes compliments.
