Our love for all things pork is exemplified in this dish. It is taking the cheapest cuts and making something delicious that our customers will enjoy. The fact of the matter is that many people don't know or are turned off by the offal meats, but we firmly believe that these off-cuts make some really delicious dishes.
We get in all our animals whole and utilize every piece and make sure that nothing goes to waste. This dish is our show of appreciation to the noble (and delicious) animal that is the hog. Our house-made sauerkraut is a nice contrast to the rich cake of braised and fried head. The apples add a fresh, bright flavor, and the fried sage mayonnaise helps pull the dish together.
