melons and proscuitto at Three Aces

melons and proscuitto ($12)
Taking a classic for a spin here. shaved cantaloupe and la quercia tamworth proscuitto make up the bullk of this dish. it's rounded out with diced waterlemon, cucamelons, tarragon, star anise powder, maldon and a few drops of maple syurp as an ode to my old man who taught me the virtues of melon and maple syrup.
melon (local/specialty) and ham (Iberico, domestic specialty, Jambon de Bayonne, etc)
