Taking a classic for a spin here. shaved cantaloupe and la quercia tamworth proscuitto make up the bullk of this dish. it's rounded out with diced waterlemon, cucamelons, tarragon, star anise powder, maldon and a few drops of maple syurp as an ode to my old man who taught me the virtues of melon and maple syrup.
