Lobster stuffed baby pumpkin with mushrooms, chard, and cognac cream ($18)
This is an awesome fall dish that I first saw at Meritage. Ever since I have ran a stuffed baby pumpkin dish. In this I tried to incorporate all of the flavors of Lobster Thermidor. First I roast the baby pumpkin and scoop out the seeds. To serve I sauté lobster, mushrooms0, and Swiss chard. Then I deglaze with cognac add cream, a grating of nutmeg and some Coleman's mustard. finish with grated gruyere cheese and stuffing warm baby pumpkin. This dish shows that baby pumpkins are for more than Halloween decoration.
