Ricotta gnudi, braised spaghetti squash, pickled cherry bomb aigre doux, fried kale ($15)
So this dish was inspired by April Bloomfield. After eating at spotted pig a few times and hanging out with her at Perennial Virant not to long ago I wanted to make some of her gnudi. The thing with them is there are so damn good the dish better be simple and flawless. There are not too flavors to compete. The squash gets a really nice flavor and richness and the cherry bombs add a great sweet and sour flavor and a spice that simply warms your soul. With all the textures being maybe a touch soft why not through fried kale on it, plus it brings in some nice umami flavor.
