Executive Chef Mark Mendez has established a reputation for combining seasonal ingredients with Latin classics. Being a Chicago native of Puerto Rican decent, Mendez found his love for dining at a young age, where family dinner was a daily ritual, his admiration for making people happy through food continues today. While attending culinary school, Mendez honed his skills at the highly regarded Spiaggia under the tutelage of Paul Bartolotta. After completing culinary school Mendez headed to New York City, working with chef, restaurateur and author Douglas Rodriguez at the famed Patria. After working at Patria, Mendez realized he wanted to get back to his roots. Upon returning to Chicago, Mendez incorporated his passion for Italian food, while exploring the food of his heritage, collaborating with restaurateur Jerry Kleiner at Gioco and later at Carnivale. Mendez’s passion and commitment to those that work with him and in the community has made him one of Chicago’s darling chefs.
