Hopefully a cookbook for the home cooks and right now a new restaurant project for early spring 2011.

Q: It's an impressive and exciting challenge to try your hand in different levels of service. From high-end to counter-service casual, do you have ideas of opening a restaurant at a different level of service than your current operation? What are your ideas?

I worked in fine dining for many years and have done more casual and volume restaurants too. I would love to do some fast casual at some point in my career.

Q: No doubt you've got your favorite menu items and specialties. Wouldn't it be dreamy to open a place specializing in your favorite items? Like a crêpe cafe, an ice cream shop, a charcuterie shack, etc. What would your ideal spin-off be?

Though its been done in the right setting I would like to do the fish taco shack and I also enjoy doing a sandwich shop that just does breakfast and lunch.

Q: Ah, the sweet smell of expansion. Do you have ambitions of opening new restaurant locations? Or new operations entirely? Do tell.

We will open a new Province in Phoenix in the downtown area in a brand new Westin Hotel in March of 2011. The new twist is that it will be a breakfast, lunch and dinner restaurant.

Q: Have you got the itch to hit "Hollywood"? Does the idea of having a cooking show or series interest you? If so, what would you do?

I would love to do a show that showcases the great farmers that we are so lucky to get our food from and show the public the start of how it grows to how its bought to how to cook it. Certainly not Hollywood.

Q: Are you feeling the siren song of another city? Another exotic locale? Would you consider moving to or working from another city, state, country? What would you do?

One day I would love to be someplace warmer in our colder winter months. That is down the road but it could be a lot of places and if there is water nearby that would be my dream!
