A Day in the Life
Your apron's tied and you're ready to roll. Time for a new day. What's the first thing you do when you get to work?
Look at my calendar for the day, and staff schedule. Book the previous day's sales, enter them onto my monthly ledger separated into food, wine, liquor, and beer, to compare on a weekly basis to our purchasing ledger. Book the deposits for credit cards. Assess month to date purchases relative to sales in the various categories. Check my cooks that cooler temperature checkoffs are done and make sure all equipment and food mise en place is good for service on on trajectory. At this point, I am either in the kitchen for a while, in the front of house, or on office hours.
