Wine and food go together like coffee and doughnuts. And not just on a place setting. What are some of your basic tips for cooking with wine?

Only cook with wine that you would enjoy drinking on its own. It's an ingredient. Why would you bother getting great proteins, vegetables, and other ingredients and then cook them with jug wine? After that, there really are no rules. A bearnaise made with white wine is great with steak, and a beurre rouge made with red wine is great with chicken or fish.
