Behind the Line: Nathan Sears
Topic: State of the Industry/Trends

Many reality shows and food channels display a fantasy world for home cooks. If you could depict a more realistic vision of the industry for TV, how would you describe the show?

The best show to get the television audience a true representation of the working of a restaurant would be similar to a cross between workaholics and top chef. Everyday I hear some story about cooks doing crazy shot on their days off. Work hard party hard I guess. The other side would be the restaurant show from top chef. So you would have a bunch of chefs eager to get out of work to go drinking or whatever, then during service the intern screws something up or slide something past you and the customer is not happy, the you turn around and the drains are backing up, then you have to deal with cooks running out of stuff and not telling you, then you do orders and organize for tomorrow to donor all over again.

People don't want a realistic view of a chef's life. This is all entertainment-it has very little to do with the restaurant business
