Whose cooking do you most admire?

i admire the cooking of the chefs at the neighborhood restaurants i have had the good fortune to experience all over the world... food stalls in Singapore...Eetcafes in Amsterdam....the corner place where i had NYE dinner with my partner in Copenhagen a few years ago... the nice chef in Nicosia Cyprus that served us candied grapefruit peel....
