Openings are always hardest, and growing pains can be feisty. At which restaurants were you on opening staff?

The two restaurants where i have been on the opening staff have been the two of which i am/was chef/owner...and the experiences couldn't be more different. Over 7 years ago i was a part of the opening of HB (which was then owned by my friends the HeartyBoys---though i was exec chef.) We opened the doors expecting to be flooded with guests, due to their win of the first "Search for the Next Food Network Star"...but nobody came. A year later i bought the place and we slowly built the business. The second experience with "Vincent" could not have been more different. It was literally like hearding cats. Two many partners involved....with too many opinions. When we opened the door on September 10, 2010 we were flooded with guests. It was crazy. Chrissy Camba and I tore it up in the kitchen. We actually ran out of food on our opening night and had to turn people away. Fast forward....new restaurant in Philadelphia set for an opening TBA.
