Q: What's one part of the world you've never been that you'd most like to explore (and eat your way through)? Why?
Italy! I often refer to myself as a 'born again Italian' I relate to the Italian food mentality more so than with any other culture's cuisine. I have spent countless hours gathering information on the food and food culture of the different regions and really enjoy the Italian perspective on food, family, ingredients, history...
Q: If you had one evening to have one meal in all of America, where would you eat and what would you have?
Somewhere on a coast. On a beach or a farm. Outside on a large open space. There would be a big fire and lots of fresh seafood, grilled and raw. Oysters. Beer. Ham. Lots of good friends and family. If I had one night to eat anywhere in America I wouldn't want it to be in a restaurant. Food should be about celebration and fun, and, while fine dining can be a truly pleasurable experience, educational and exciting, my one evening to have a meal anywhere in America wouldn't be in a restaurant.
Q: What world cuisine do you wish you had the opportunity to explore further?
I know very little about the different asian cuisines. I would love to learn more about Thai and Vietnamese food. I would love to learn more about CHinese or Japanese butchers and if there are any interesting cuts these cultures use that would be fun to offer my customers.
