What world cuisine do you wish you had the opportunity to explore further?

I know very little about the different asian cuisines. I would love to learn more about Thai and Vietnamese food. I would love to learn more about CHinese or Japanese butchers and if there are any interesting cuts these cultures use that would be fun to offer my customers.
