A Day in the Life

If you had to pick a favorite dish on your menu, what would it be?

People ask me this all the time. I love all the dishes, otherwise they wouldn’t be on the menu. I am particularly proud of our duck confit. I don’t think anyone in Chicago does a better duck confit than West Town Tavern. We use Moulard legs because they stand up to the confit process better than Pekin. We let the legs cure in spices for several days and them steep them in duck fat. The waiters know it is my favorite and they tell the guests. However, it takes a special person to fully appreciate duck confit with its crispy skin, succulent fat and savory, silky meat.
