I have owned all but two of the restaurants I have worked in!
1. Something Different: Carry Out Cuisine. I learned I really could cook. I learned it was hard to please everyone and I developed standards for myself. I learned that I couldn’t control every aspect of the business and that to be really successful I had to grow.
2. Something Different: The Restaurant. I learned food cost-the hard way
3. SNAX (Not a Sports Bar) I learned that people in Indianapolis had never heard of tapas and thought I was saying “topless bar”
4. Zinfandel Restaurant: I learned that no matter how cool the concept-you had to get people excited about it. I began to learn marketing
5. West Town Tavern: I am learning what I need to make myself happy and fulfilled
