Try and do something that's pretty simple but ahead of time. In the winter it's pretty standard to break out a bad ass choucroute garni, with different sausages, slab bacon and we'll smoke a pork rack to finish it. Roasted fingerlings and a nice vegetable with lots of brown butter, lemon zest and sea salt. Lots of delicious wine and something easy for dessert, seasonal crumble or brownies-always with vanilla ice cream. So good.
