Do you use any family recipes in your restaurant?

Yes. Dia's Cheese Bread (Which is coming back on the menu at Niche when we move to our new location). This is actually pao de queijo, a Brazilian recipe, from Minas Gerais, a town where my nanny was from. Dia was a very special woman who really understood cooking better than anyone that I have ever met. This bread was part of my every day life growing up and constantly reminds me of her cooking.
